Fruit was harvested mid-April and gently crushed into an open fermenter. No additions were made to the wine and fermentation was conducted by wild yeast. Throughout the ferment the must was hand plunged prior to basket pressing after 7 days. The resulting wine has lovely spice and red stone fruit. The palate is medium bodied with savoury tannins, an elegant softness and will continue to grow in bottle. A tiny amount of our estate Shiraz was added to help provide middle palate weight. A beautifully perfumed wine from a great vintage.
The 2020/2021 season was very moderate with a long and gentle summer. Adequate rain across the growing season allowed excellent vine growth and this was especially apparent across all varieties. Veraison was followed by excellent ripening conditions which allowed strong varietal expression and high quality.
