Fruit was harvested mid-April and gently crushed into an open fermenter. No additions were made to the wine and fermentation was conducted by wild yeast. Throughout the ferment the must was hand plunged prior to basket pressing after 6 days. The resulting wine has lovely aromatic spice, medium bodied with long and youthful tannins. A wine that will continue to grow in bottle and best consumed with tapas styled food.
Vintage comments
The 2021/2022 season was very moderate with a long and gentle summer. Adequate rain across the growing season allowed excellent vine growth and this was especially apparent across all varieties. Veraison was followed by excellent ripening conditions which allowed strong varietal expression and high quality.
