Our ‘Cyrils Block’ Cabernet Sauvignon is an important part of the Dogrock vineyard story. Estate grown, in Victoria’s Pyrenees, warm days and cooler nights allow Cabernet to achieve ripeness and concentration while retaining the structure, freshness and savoury character that give the variety its distinctive character and longevity.
The 2023 vintage produced a Cabernet with dark fruit, cassis and lifted spice at its core. The palate is finely structured, with generous fruit carried by savoury complexity and fine tannins. Freshness brings balance and definition, drawing everything towards a long, measured finish.
There is a lovely restraint to this wine — cassis, dark berries, spice and savoury detail rather than sheer weight. Structured yet approachable, it captures the character we look for in Cabernet from Cyrils Block: depth without heaviness, freshness alongside concentration, and a clear expression of variety and place.
