The fruit for our latest Sparkling red came from our own estate. Dogrock has consistently utilised blending to make wines of interest and elegance for sparkling red.
Following primary fermentation, wine was blended and secondary fermented in bottle. Left on yeast lees for a further 12 months with a relative low dosage of 20 g/L residual sugar used. A wine that is soft and balanced yet showing vibrant red fruits and a long somewhat dry finish for a sparkling red.
