Pedro's is Dogrock's distinctly Australian take on sparkling red — generous, vibrant and made with a deliberately restrained hand. Crafted from 55% Shiraz and 45% Grenache, blending allows the character, balance and elegance of both varieties to come together in a distinctly Dogrock style.
Following primary fermentation, the 2021 wine was carefully blended before undergoing secondary fermentation in bottle. It then spent a further 12 months on yeast lees, building texture and complexity. A relatively low dosage leaves just 20 g/L residual sugar, creating a sparkling red that feels balanced and vibrant rather than overtly sweet.
In the glass, bright red fruits and spice meet a soft, generous palate, fine bubbles and a long, refreshingly dry finish. Shiraz provides depth and structure while Grenache brings brightness, fragrance and supple red fruit — the combination making Pedro's both unmistakably Australian and unmistakably Dogrock.
Serve lightly chilled. Vibrant and immensely enjoyable now, Pedro's also has the structure to develop further over 10–15 years.
