Our ‘Cyrils Block’ Cabernet Sauvignon is an important part of the Dogrock vineyard story. Estate grown, in Victoria’s Pyrenees, warm days and cooler nights allow Cabernet to achieve ripeness and concentration while retaining the structure, freshness and savoury character that give the variety its distinctive character and longevity.
The 2021 growing season was warm to mild, producing fruit with excellent flavour and balance. Spice and cassis lead the aromatics, opening onto a medium-bodied palate with generous dark fruit and a long, composed finish. Maturation with 50% new French oak brings additional structure and complexity while allowing the Cabernet and vineyard to remain at the forefront.
Structured yet approachable, this is Cabernet built around cassis, dark fruit, spice and fine savoury detail, with French oak providing shape and depth. Its combination of fruit, structure and length gives the wine considerable potential to evolve — a distinctly Pyrenees Cabernet grounded in its place at Dogrock.
